The Skookum Santoku is a wonderful knife made from 1/8 inch 8670  high carbon steel with an elk horn and ebony handle. This is a solid 11.5" blade with a 6.25”  razor sharp and hardened cutting edge. This blades HRC is file tested around 60. It's a good measure of hardness in a culinary knife. Made to tackle any job in the commercial or home kitchen. You will find that this is a sturdy tool that was made for the job.
